I decided that if I was going to 'dare myself to bake', I needed to buy a challenging recipe book. Whilst being completely overwhelmed by how many different recipe books a book store has, I happened to settle on one.
I asked my boyfriend to pick any recipe for me to start with and this is the deliciously sweet one he chose.
It is quite an easy recipe to follow and if you just want a banana cake then you don't need to add the butterscotch.
Ingredients:
3 eggs
2 cups (400g) Sugar
1+1/3 (330ml) vegetable oil
3 or 4 ripe bananas (depends on whether you want a more banana texture)
1/3 cup (80ml) buttermilk or sour cream (buttermilk gives a better moist texture)
1 Tbsp (15ml) vanilla essence
3 cups (420g) flour
1 tsp (5ml) baking powder
pinch of salt
1/4 cup (25g) desiccated coconut
1/2 cup (60g) Walnuts (some coarsely chopped but leave whole ones for decorating)
Method:
Preheat your oven to 180°C.
Grease 2 medium loaf pans and line the bottom with baking paper.
In a large bowl, whisk together: the eggs, sugar (I would use 1+1/2 rather because this cake is very sweet), oil bananas, buttermilk and vanilla essence. Set aside.
In another bowl, sift together: the flour, baking powder and salt.
Add this to the wet mixture and then stir the coconut and walnuts in.
Pour the batter into the prepared pans and place a few walnuts on top for decoration.
Bake for 30-40 minutes or until a skewer comes out clean (I found with my older oven, it needed about 50-60 minutes and I turned up the heat to 200°C till I saw it start browning lightly on the top)
As soon as the cakes come out of the oven, pierce them all over with a skewer and pour bubbling butterscotch over the top. Leave to cool in the pan.
Use a knife to scrape sides away from pan and pop out. Ready to serve.
Butterscotch Glaze
Ingredients:
1/2 cup (100g) soft brown sugar
70g unsalted butter
4 Tbsp (60 ml) cream
Method:
Place all the ingredients in a saucepan and heat gently until the sugar has dissolved and the mixture is bubbling.
Enjoy and watch this cake get wiped out by your friends and family :)
