I love to order chai tea when I go out to restaurants so naturally I was excited when I came across this recipe. It is an absolutely to die for recipe, my cupcakes got wiped out! Enjoy!
Makes 24 cupcakes
Ingredients:
375g butter
1 1/2 cups sugar
1/2 cup chai tea powder (just bought a packet from the local supermarket)
5 eggs, at room temperature
1/2 tsp vanilla essence
3 cups cake flour
1 tsp ground cinnamon
1 tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
1 cup buttermilk
Method:
Preheat the oven to 180°C . Line cupcake tins with 24 paper cases.
In the bowl of an electric mixer, with the paddle attachment, cream the butter, sugar and chai.
Add the eggs, one at a time, scraping down the sides of the bowl regularly.
Add vanilla. Sift the flour, cinnamon, baking powder, bicarbonate of soda and salt, then add it to the butter mixture. Then add buttermilk.
Divide the batter between the paper cups. Batter may be clumpy and thick but this is okay.
Bake for 20-25 mins. Leave to cool before decorating with Cinnamon Buttercream Icing.
Cinnamon Buttercream Icing:
Ingredients:
125g butter, softened
1 1/2 cups icing sugar, sifted
2 Tbsp milk
1 tsp ground cinnamon
Method:
Beat the butter until pale and creamy. Add the icing sugar and half of the milk. Beat until combined. Add the ground cinnamon. If the mixture is too firm then add the rest of the milk but I found I didn't need to do this.
I decorated with sugar coated silver balls and hearts.
