Ingredients:
2½ cups (350g) flour
1 Tbsp (15ml) baking powder
2 cups (400g) sugar
1 cup (120g) cocoa powder, sifted
200g unsalted butter, melted
3 large eggs
1 cup (250ml) milk
½ cup (125ml) vegetable oil
Method:
Preheat the oven to 180°C. Grease and line a 23cm cake pan. I lined the bottom of the pan with baking paper so it would pop out easily.
Place all the ingredients in a large bowl and mix well to combine.
Pour the mixture into the prepared pan and bake for 35-40 mins (or until a skewer comes out clean). I found my cake took longer to bake due to my old oven so just be aware.
Rest for 5 minutes, turn out and cool completely. Ice the cake with chocolate icing and sprinkle with the pistachio nuts.
Chocolate Icing:
Ingredients:
1¼ cups (315ml) cream
200g milk chocolate, broken into pieces (I used baking milk chocolate discs)
1 tsp (5ml) golden syrup
1 cup (200g) shelled pistachios, chopped. (I found a 100g to be enough)
Method:
In a small saucepan, heat the cream to almost boiling point and then pour it over the chocolate pieces in a large bowl. Leave for a few minutes and then stir until the chocolate is smooth and glossy.
Add the syrup.
Cool completely.
Serve and enjoy :)
